Top quality ingredients are used in every product so as to preserve the integrity of each item down to a single truffle. This includes using only organic heavy cream and pure extracts, unbleached flour, organic lemon juice and fresh herbs. The couverture chocolate used on all confections, white, milk, 58% and 65% dark chocolate, is supplied by Albert Uster. Every curd, mousse, cake, frosting and ganache is made in house and from scratch.
Graduate of the Culinary Institute of America
I have been in the restaurant industry for more than 25 years. My true passion lies in confections and pastry which encouraged me to return to school in 2012 and earn my Associate's Degree in Baking and Pastry. The program includes education from breads, laminated dough, cakes to entremets and truffles to toffee!
